This website has an explanation of ecological footprints, how to calculate it by hand as a class, then data sheets to compare to other per capita places as well as discussion questions. Well worth checking out.
Here is a website similar to the one above, but from Conneticut. It can easily be adapted to Saskatchewan, however.
